Why we like it

It is smooth and round from the first sip, opening with notes of butter cookie, to then give way to a juicy acidity reminiscent of green plum and fresh lime. History

In the heart of Huila, Fredy and Gladys grow coffee with the same dedication they show when caring for a legacy. Their farm, El Mirador, has established itself as a benchmark in clean and consistent processes

Both producers have been recognized for their commitment to quality—including awards such as the Taza Platino—and they work each batch with almost scientific attention. The estate, surrounded by vegetation and ideal microclimates, allows the purity of this varietal to be expressed with transparency and freshness in the cup.

Today, their microlots not only shine in international tastings, but are also part of a lifelong project where family tradition and coffee science coexist. Finca El Mirador is not just an origin: it's a testament to how Colombian coffee continues to reinvent itself.

Variety and process

In El Mirador, the washed process is carried out with great precision: after a rigorous manual harvest, where cherries are selected at 90% ripeness, the fruits are pulped and fermented in tanks for a controlled period of time, adapted to ambient temperature and pH conditions. The berries are then washed with clean water and slowly sun-dried, resulting in clean, shiny, and structured cups.

Pink Bourbon is a naturally occurring hybrid variety, created in Colombia from a cross between Red and Yellow Bourbon. Its name comes from the pink color its cherries acquire when ripe. In addition to its botanical rarity, this variety is prized for its distinctive sensory profile: it offers lively acidity, a silky body, and notes ranging from floral and citrus to sweet tropical fruits. Grown at high altitudes like those of El Mirador, Pink Bourbon reaches its maximum aromatic expression and complexity in the cup.
