WHY WE LIKE IT

This coffee captures the essence of the Brazilian Cerrado region, with a flavor profile we often repeat: it's enzymatic and fruity, with undertones of chocolate and notes of stone fruits. Its creamy sweetness makes it smooth and pleasant. With a medium body and moderate acidity, it is balanced and perfect both on its own or with milk.

HISTORY

The Cerrado Mineiro region is a globally recognized origin for high-quality coffee and is Brazil’s first "Denomination of Origin" (D.O.), located in the northwest of the state of Minas Gerais.

Having well-defined seasons, with a hot and humid summer and a pleasantly dry winter, is a strong characteristic of the region. Coffee is grown at altitudes between 800 and 1,300 meters, resulting in high-quality coffees with a unique identity.

Coffees from this region are "Origin and Quality Guaranteed" by the Regulatory Council of the Cerrado Mineiro Region - D.O.

VARIETY AND PROCESS

This batch was processed using the natural method. The initial drying took place on a concrete patio. The drying continued on African beds until the coffee reached the ideal humidity.

This coffee is from the Catuaí Vermelho varietal.

The Catuaí Vermelho is a version of the Catuaí variety that emerged from the cross between Mundo Novo and Caturra in Brazil in 1949. As its name indicates, the Catuaí Vermelho is characterized by the red color of its fruits, unlike the Catuaí Amarelo, which has yellow fruits.

Characteristics of Catuaí Vermelho:

  • Plant Size: Like other Catuaí varieties, the Catuaí Vermelho has a compact plant, making it easier to manage in terms of pruning and harvesting. This trait also allows for a higher planting density, potentially increasing productivity per hectare.
  • Productivity: The Catuaí Vermelho is known for its high productivity compared to traditional varieties like Bourbon. Its productivity is one of the reasons it has become very popular, especially in Brazil and other Latin American coffee-producing countries.
  • Resistance and Management: The plant is resistant to certain climatic factors, although it remains susceptible to rust, as is the case with many Arabica varieties. Its low stature and the ease of controlling pests and diseases are advantages that make it attractive to producers.
  • Adaptability to Different Climates: While the Catuaí Vermelho is especially valued in Brazil, it has also spread to other Central American countries such as Honduras, Costa Rica, and Guatemala, where it is widely grown. In these countries, the Catuaí variety has helped improve coffee cultivation efficiency, as the plant can be grown more densely and harvested with greater ease.
