BECAUSE WE LIKE IT
It is smooth, balanced and very pleasant. Its fruity enzymatic fragrance stands out, with notes of lychee and red fruits. We also find notes of amaretto and spices, which give it body and balance. It is a sweet and original coffee, with high acidity.
We use 20 grams of ground coffee and 320 grams of final water at 93C. We make three pours. The first 50 gr, we wait 30 seconds and make two pours of 135 grams in a total time of 3 and a half minutes.

VARIETY AND PROCESS
The process of this coffee is natural: the beans are left to dry in the sun without having gone through a washing process.
