The most comprehensive and demanding training for professionals who need to evaluate coffee using a modern, consistent, and internationally recognized standard. This course will turn your sensory judgment into a reliable decision-making tool for purchasing, quality control, roasting, training, and product development. We work with the SCA’s Coffee Value Assessment (CVA) framework, designed to describe and communicate coffee value with precision by separating physical assessment, descriptive sensory evaluation, affective assessment, and extrinsic factors—reducing bias and improving analytical consistency.

What You Will Learn / What You Will Train

You will train a real-world–applicable evaluation method: professional cupping mechanics, sensory calibration, table consistency, and clear technical language. Throughout the week, you will work with structured flavor and aroma sessions, triangulations, defect recognition, and comparative analysis to develop a precise and repeatable reading of coffee. The goal is for you to confidently and rigorously measure, compare, and justify what happens in the cup, communicating effectively with teams and clients.

Assessment and Exams

The course includes formal assessment to qualify for licensure: 9 exam components (practical + written). Key skills evaluated include Cupping Skills, Physical Assessment (green coffee), Descriptive Assessment, Affective Assessment, Olfactory Category Examples, Main Taste Solutions, Triangulation, and Roasting Problems, as well as a theoretical exam. This is a demanding program: the difference here is not “having a good palate,” but demonstrating consistency, methodology, and analytical capability to standard.

** Cancellation Policy:
When you purchase a spot for a course, you will receive an email confirming your reservation, and we will begin preparing the class. However, the number of spots available to the public will be reduced by the same number you booked, and if the course is full, it will no longer be available for purchase.
