WHY WE LIKE IT
As soon as we tasted this coffee we realised that it was an explosion of flavour in our mouths. It has a unique texture similar to mango yoghurt, followed by a sweet date-like layer. It is a magical coffee on the palate with a pleasantly acidic finish, characteristic of wine.
RECIPE
For filter:
We use 20 grams of ground coffee and 320 grams of final water at 93C. We make three pours. The first one of 50 grams, we wait 30 seconds and make two pours of 135 grams in a total time of 3 and a half minutes.

HISTORY
The Aguilera Brothers are known as the pioneers and first coffee mills that existed in the country, so if you are looking for coffee in Costa Rica, Los Aguilera will probably be the first to appear in your search. They are also known for their high quality and excellent coffees that are enjoyed all over the world.
Like the history of many Costa Rican families, the Aguilera's followed in the footsteps of their grandparents, with the passage of time and thanks to the union and work they were able to acquire their own land surrounded by the mountains of their village which is located at an altitude of 1300 to 1500 masl. Edgar, the father, had the vision to grow and started planting Villa Sarchi brought from the neighbouring village of Sarchi and over the years they decided to grow and plant other very exotic varieties such as SL28, Geisha, Sidra and others.
So the 12 brothers and sisters are part of the family project, each with their own specific work and are very proud that they are able to carry this project forward.
The Aguilera Brothers never cease to amaze us, with their great quality and commitment to us and their customers to deliver year after year the best coffees.
This year 2022, thanks to their great effort, they won ninth place in the Cup of Excellence contest in Costa Rica, which places them among the best projects in the country.
VARIETY AND PROCESS
Variety is SL28
The Aguilera Brothers make sure that each day the ripest coffee beans are picked, after being measured at the farm the Aguilera Brothers take it to their mill where it goes through a flotation system to remove foreign materials from the coffee and then it is rested for 48 hours to give better flavours and more complexity to the cup, after this process the coffee is taken to African beds for about 17 days until it reaches optimum humidity.
The Aguilera's have their own dry mill. In this case, the coffee comes out completely ready, where it is peeled from its parchment, sorted by density, selected in an electronic machine by colour and any defective beans are removed. The coffee is then packed and ready in the container to be delivered to the roastery.
