WHY WE LIKE IT

We like this coffee for its balance: it's clean and elegant, yet very expressive. It's very floral, with a citrus character reminiscent of a fresh mandarin. It has a soft vanilla base with a medium body and outstanding sweetness. It's ideal if you're looking for a complex sensorial experience without losing its smoothness.

VARIETY AND PROCESS

Pink Bourbon is a natural mutation of traditional Bourbon, characterized by the distinctive pink color of its cherries when they reach their optimum ripeness. This variety has earned a special place in specialty coffee growing for its complex and elegant cup profile, with bright acidity, floral notes, and a juicy sweetness reminiscent of red fruits and sweet citrus. Although its cultivation requires careful management, its agronomic performance and sensory quality make it highly valued among producers and tasters.

In regions such as Pitalito, Huila, Pink Bourbon has found ideal conditions to fully express itself: high altitudes, rich soils, and a coffee culture deeply connected to quality. Cultivated by expert hands like those of the families of Asosatus, this varietal represents not only a high-quality coffee, but also a commitment to innovation and differentiation.

RECIPE

For filter:

We use 18 grams of ground coffee and 315 grams of water at 91°C, in a total time of 2'20". We make five pours:

Pouring 50g of water in 30"

Pouring 110 gr of water up to 1'

Pouring 180 gr of water up to 1'20"

Pouring 230 gr of water up to 1'35"

Pouring 310 gr of water up to 2'
