VARIETY AND PROCESS
Pink Bourbon is a natural mutation of traditional Bourbon, characterized by the distinctive pink color of its cherries when they reach their optimum ripeness. This variety has earned a special place in specialty coffee growing for its complex and elegant cup profile, with bright acidity, floral notes, and a juicy sweetness reminiscent of red fruits and sweet citrus. Although its cultivation requires careful management, its agronomic performance and sensory quality make it highly valued among producers and tasters.
