WHY WE LIKE IT
In this coffee we find sweet notes such as vanilla and honey. We also perceive a floral note that lingers into the aftertaste and adds complexity to its smooth and delicate texture in the mouth. It is a complete coffee that we recommend you enjoy on its own.
RECIPE
For filter:
We use 20 grams of ground coffee and 340 grams of final water at 93C. We make three pours. The first one of 50 grams, wait 30 seconds and make two pours of 145 grams in a total time of 2' 30" / 3'.

HISTORY
Edward Sandoval is part of a new generation of young Colombian coffee farmers who strive to innovate their processes and ensure impeccable quality standards to help them achieve a sustainable income.
For many years he worked as an "extensionist" for the National Federation of Coffee Growers. In that role he helped farmers improve the management of their farms. However, tired of the old practices and tired of learning about new varieties that the FNC did not promote, he decided to become independent and have his own farm.
At Canta Ranas he has Wush Wush, Gesha, Moka, Caturra, Chiroso and bourbon rosé. This vintage marks Canta Ranas' third, and it is a real honour to be able to work with someone as dedicated as Edward and his family.
As a side note, the name Canta Ranas means singing frogs. There is a large stream that crosses the farm, and in it there are dozens of frogs that sing during the night and are a crucial part of the "ambience" around the farm.
VARIETY AND PROCESS
Chiroso is a mutation, although it is not known for sure if it was a mutation of Caturra or of an Ethiopian variety. This variety is not well known outside Ethiopia, but it is common in Colombia. The fruits of this variety have a characteristic elongated shape and bring complexity and floral notes to the cup.
